What is the difference between riding tights, jodhpurs and breeches?

All three do the same core job - a flat, seam-free leg you can sit on for an hour without being rubbed raw - but they get there differently.

Riding tights

Knee patch or full seat - which grip do I actually need?

A knee patch puts grip only where your knee meets the saddle flap. It is the standard choice for general riding, it is cheaper, and it lets your seat slide slightly, which many riders prefer for jumping. A full seat runs grip across the seat and down the inside of the thigh, which holds you in place for flatwork and dressage. It can feel "sticky" if you are used to a knee patch, so it is worth trying on the flat before a competition.
